Gluten Free Pizza

First of all I am a teacher football coach for the past 30
 years, and a pizza maker on the side. 

I want to retire from education and
 open up a pizza shop, I tend to make a sicilian/old forge style pizza
 crust. However, my wife who we recently discovered has "CELIAC disease"
 she cannot eat foods with wheat/gluten, has discovered a great recipe for
 gluten free pizzas and crusts.

We would like to market the gluten free
 aspect of pizza, can you lead me in the right direction,
