Hi Albert,

I am currently using dry yeast in satchels and have made great, light pizza dough with great results..... until last night.
I made a dough from a dry yeast satchel that turned out very heavy while I was kneading.
It barely doubled in size after a couple of hours... even with warm water under the container that it was kept in.
When cooking it barely rose and was very thin crusted and crispy.
Do you thing the problem was the yeast? The yeast is normally granulated which it was, but the sealed packet was full of air and ballooned.
The expiry date said Oct/ 09.

Hey Dom.

It very well could be the yeast. I have bad batches of yeast before.

Also if the water was too hot it would kill the yeast and that may have caused the proble.

I would try using a different batch of yeast to see if that fixed the problem.

please let me know how you made out..
